Eating Well and Keeping it Real

As a part of our #WiltWIP campaign, we have partnered with women who inspire us across the country. Through their work they continue to inspire us and the world around them, without further adieu meet Lee.

At a young age, Lee Tilghman developed a fascination with food from spending time cooking with her family. Since then she has become a healthy eating advocate, recipe developer and entrepreneur based in Los Angeles. Lee’s motivation to positively impact her community and those around her has lead her to become known for her bright colored, simple and healthful recipes created to highlight the ingredients in their natural, whole state. Read more about Lee’s beautiful creations below...

Where did you discover your love for food and cooking?

I have always been infatuated with food. In addition to my aunt being a plant-based chef in Boston, my father was also an incredible cook. Although he traveled often we would spend a lot of time together in the kitchen creating recipes based on his travels and trying new things.

Then, I had the opportunity to work on an organic farm in exchange for a place to stay. There i had an opportunity to work with the ingredients first hand.

What inspires your recipes?

I’m inspired by the farmers market and the people that I’m around. I love meeting new people and hearing their stories. I am inspired by nature, and simple ways of living. I try to create my recipes to showcase the ingredient in it’s most pure state, without messing around with them too much.

What’s your favorite recipe or favorite ingredient?

My favorite ingredient is medjool dates. I love eating them throughout the day but they’re also a great snack before yoga. They’re perfect to include in smoothies, they’re like nature’s candy.

Outside of creating recipes, how to do keep yourself balanced?

I’ve been practicing yoga on and off since I was thirteen. Going to a yoga class can be hard when you’re moving and traveling, and of course sometimes it’s expensive. I try to practice daily, even if that means doing a couple of poses at home if I can't take a full class. It calms me, centers me, helps me have a more intimate relationship with more body. It helps me have more confidence and even improves my posture.

What does success look like for you?

Success to me means doing something on a daily basis that makes my community a better place than it was before. Treating your body well and living a minimal life that heads to the environment is something I strive for every single day. Once you’re taking care of your body you can be a better version of yourself and influence your community in a positive way. I try to inspire people to treat their bodies right and do something they love. It unlocks a conscious that wasn’t necessarily around when you’re eating artificial foods.

I’d love to travel and teach classes, write a cookbook or even have my own farm someday. My goal is to continue living this life and hoping to inspire people along the way, even if that means trading a bag of potato chips for a cucumber, that to me, is success.
